Delicious Peach Crumble Bars

With peach season nearing an end, now is the perfect time to give one of my favorite fruits one last day in the spotlight. These Peach Crumble Bars are a light, delicious, and healthy treat to enjoy in the fading summer sun.

While the insides are gooey and sweet, the crumble topping adds a crunchy texture that’s irresistible.  

Make sure to stop by one of your local roadside peach stands, stock up, and treat yourself!

Ingredients

  • 1-2 ripe peaches cut into small cubes

  • 1 tsp vanilla

  • 2 cups superfine almond flour

  • 1/4 cup coconut oil

  • 2 tbsp maple syrup

  • 1 tsp cinnamon

  • Pinch of salt

  • 1/4 cup coconut flakes for topping

The Perfect Peach

Peach season general runs from the end of May to the beginning of August, depending on where you’re from. Living in Colorado, where we get a full 300-plus days of sunshine, our peach season can extend all the way into October if we’re lucky, producing some of the juiciest, sweetest peaches in the world!

When making the crumble bars, it’s best to go for the ripest options. Give them a light squeeze to check for that slightly soft feel. You might also find that the ripest peaches have a slightly fragrant aroma. All this will lead to an extra gooey texture and natural sweetness.

Sweet Almond Flour

Whether you’re gluten free or not, you might find that almond flour is the perfect alternative to the traditional wheat options. For one, it’s naturally sweeter than its counterparts, which makes it a great choice for baking.

Rich in vitamin E, magnesium, and other important nutrients, almond flour also brings along a host of additional health benefits. Several studies have even found that almonds can play a role in lowering cholesterol levels and thereby improving one’s heart health.

For me, I used Bob’s Red Mill Super-Fine Almond Flour, which can be found at most of your local grocery stores.

Customize Your Crumble 

Don’t be afraid to get creative!

If you’re looking for an additional crunch to your crumble, consider tossing some chopped almonds or walnuts into the mix. A handful of raisins or a sprinkling of cacao nibs might bring another layer of sweetness without harming the dishes nutritional profile.

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.

  2. Wash and cut peaches into cubes and set aside.

  3. Combine almond flour, coconut oil, cinnamon, vanilla, and salt. Mix together until clumps start to form.

  4. Line a baking dish with parchment paper. Press 2/3 of the dough together with your hands or a fork at the bottom of the pan so a crust is formed.

  5. Top crust with cubed peaches.

  6. With the last 1/3 of the dough, press together little clumps of the dough for a crumble to top over the peaches.

  7. Top with coconut flakes.

  8. Bake for 10-15 minutes. To brown the crust, broil for a few minutes.

  9. Enjoy!
