Ingredients:

Crust:

  • 1 cup GF flour (almond is preferred)

  • 1 ½ cup glyphosate free oats

  • 1 tsp baking powder

  • ½ cup maple syrup

  • ¼ cup coconut oil (melted)

  • 1 tsp vanilla

  • 1 tsp salt

Filling:

  • 2 cups of raspberries (fresh or frozen)

  • 1 tablespoon or roughly 1 large lemon zested

  • 1 tablespoon or roughly 1 large lemon squeezed

  • ⅓ cup coconut sugar

  • 1 tsp vanilla

Instructions:

  1. Preheat the oven to 400 degrees F.

  2. In a large bowl, combine the crust ingredients and mix thoroughly.

  3. Line a 8x8 inch baking pan with parchment paper.

  4. Add the crust mixture to the pan but keep out around ½ cup of the mixture.

  5. Press the crust down with a fork until you have an even layer and it is tightly packed.

  6. In a small saucepan, combine the filling ingredients and mix thoroughly. Use a fork or whisk to press the raspberries into a mash. They all don’t need to be completely mashed but you want it in a jelly-like consistency.

  7. Cook the mixture for a few minutes then remove from the heat.

  8. Pour the filling on top of the crust and spread evenly.

  9. Take the ½ cup of crust and crumble over the top.

  10. Bake the bars for 30 minutes. Let them cool completely before serving!
