Cozy Instant Pot Ground Beef Chili

And whether it be a potluck, game day, or holiday celebration, my Cozy Instant Pot Ground Beef Chili is the perfect dish to bring to the table, packed with all the comforting fall flavors you love.
This recipe is great for feeding a crowd or for meal prepping for the week. Plus, it’s easy to customize! From kicking up the heat to experimenting with your toppings, there are plenty of ways to make this chili your own.

Ingredients
Chili Mix
1lb grass fed ground beef
1 yellow bell pepper
1 red bell pepper
1 white onion
2 cans kidney beans (15oz) drained and rinsed
1 can black beans (15oz) drained and rinsed
28oz can of fire roasted tomatoes
1 package of frozen corn
1 1/2 cups of beef broth or chicken broth
3 cloves of garlic
3 tsp paprika
4 tablespoons chili powder
2 tsp paprika
1/4 tsp cayenne pepper
Salt and pepper to taste
Toppings
Tortilla chips
Sour cream
Cilantro
Avocado

Alternative Cooking Methods
Slow Down with a Slow Cooker
If you have the time to spare, then going the route of a slow cooker is worth the reward. After cooking the ground beef and chopped veggies on the skillet, toss everything in the slow cooker and allow the chili to simmer for 6-8 hours (on low) or 3-4 hours (on high). When you’re done, you’ll have a beautifully tender and flavorful batch of ground beef chili!
Keep It Simple on the Stovetop
If it ain’t broke, don’t fix it. You can easily make this recipe on the stove top if you don’t have an Instant Pot or slow cooker. Once again, cook your meat and veggies, and then add the beans, broth, corn, and seasoning into a large pot. Bring the chili to a boil before lowering the heat and allowing it to simmer for 45 minutes to an hour, stirring occasionally.
Kicking Up the Heat
If you’re a fan of the heat and want to take the whole batch up a notch, then feel free to add a jalapeño or two into the main mix. Another small scoop of cayenne pepper should also do the trick.
But if you know you’ll be serving to a party of varying tolerances, leave the main pot the same and simply include additional jalapeños and cayenne pepper on the side as toppings.
As always, if you’re unsure how much heat you can take, start small and go from there.
Why Grass-Fed Beef Matters
While grass-fed beef can be a little more expensive than its grain-fed counterparts, it’s far more nutritious. Full of omega-3 fatty acids, grass-fed beef is a lean option that can support heart health and reduce inflammation.
And, importantly, because the cattle are raised on pastures, the production of grass-fed beef comes with more sustainable farming practices and improved welfare for the animals.
Instructions
Chop up the bell peppers, onion, and garlic. In a large skillet, cook the ground beef and chopped veggies until the beef is cooked through and the veggies are soft.
Take the instant pot and drizzle olive oil in the bottom of the container. Add in the cooked veggie-and-beef mixture. Pour in the beans, broth, corn, and seasoning.
Mix thoroughly, close the lid, and set to seal. Set it on high pressure and cook for 18 minutes. Let it slow release for 10-15 minutes once the timer goes off.
Mix and season with salt and pepper to taste.
Serve with desired toppings and enjoy!
