Ingredients
1 1/2 cup chopped organic strawberries
1 1/2 cup unsweetened Greek yogurt (I used coconut for a dairy free option)
1 tsp vanilla extract
1 cup toasted quinoa
1-2 cups dark chocolate chips
1 tablespoon coconut oil
Drizzle of olive oil

Strawberries consistently rank on the Environmental Working Group’s (EWG) The Dirty Dozen list, meaning they’re one of the most pesticide-contaminated crops on the market. Because of this, it’s crucial to buy organic in order to avoid ingesting harmful chemicals, including several that have been “linked to cancer and reproductive damage.”

Instructions
Preheat the oven to 375 degrees F.
Cook quinoa according to directions on the package. Once cooked, line a baking sheet with parchment paper and place the cooked quinoa in a single layer. Drizzle olive oil on top.
Place in the oven and bake for 25-30 minutes or until browned.
In a large mixing bowl, combine the yogurt, vanilla, and strawberries. Mix together.
Once quinoa is done, fold into the yogurt mix.
Scoop mixture into balls and place on top of parchment-paper-lined baking sheet. Transfer the baking sheet to the freezer and freeze for 1-2 hours minimum.
When you are ready to dip them in chocolate, add the chocolate chips to a small bowl and add in coconut oil. Microwave on high in 30-second intervals until melted.
Remove the yogurt cluster from the freezer and dip each one in the chocolate until they are coated. Once all clusters are dipped in chocolate, place back in the freezer for 20-30 minutes.
After 30 minutes, you can store these in the fridge! Enjoy!
