These cookies are melt-in-your-mouth good, with the nutty richness of browned butter, the crunch of salted pistachios, and the indulgence of dark chocolate.

Ingredients

  • 1/4 cup maple syrup

  • 1/2 cup coconut sugar

  • 1 cup unsalted butter (melted and browned)

  • 1 1/2 cup flour (use almond to make GF)

  • 1 tsp vanilla extract

  • 1 tablespoon cottage cheese

  • 1 tsp baking soda

  • 1 tsp corn starch

  • 1 tsp sea salt

  • 1 egg

  • 1 cup chopped salted pistachios

  • 1/2 cup cacao wafers

  • 1/4 cup dark chocolate chips

For balance, we’re still tossing in a few dark chocolate chips for that gooey, sweet touch. But feel free to mix and match to your own preference.

Instructions

  1. Melt the butter in a medium saucepan. Once melted, the butter will foam and sizzle for a few minutes. Gently stir until you can see golden milk solids floating in the butter and it turns a golden brown.

  2. Remove from heat and let cool in a separate bowl. If you leave the butter in the pan, it will continue to cook and potentially burn.

  3. While butter is cooling, whisk together the coconut sugar, maple syrup, vanilla extract, and add in the butter when it is no longer hot (can be warm). I recommend using a standing mixer or handheld mixer.

  4. Add in the egg and cottage cheese. Whisk until combined.

  5. Add in the baking soda, baking powder, cornstarch, and salt. Whisk until combined.

  6. Fold in the flour and continue mixing until thoroughly combined.

  7. Chop up the pistachios, chocolate chips, and cacao wafer to desired size. Hand mix these into the batter.

  8. Cover and chill the dough for at least three hours. Once ready to bake, preheat the oven to 350F and line a baking sheet with parchment paper.

  9. Bake for 10-12 minutes or until the center looks a little bit underdone.

  10. Let cool and enjoy!
